Speaking English, Albanian, Italian, and French, our restaurant manager Arsen has a natural gift for connecting with people. Before finding his home on Natai Beach in Thailand, he spent three years working at Simon Rogan’s two Michelin-starred restaurant ION Harbour in Malta, where he refined his expertise in world-class hospitality.
Now at Aulis Phuket, Arsen brings his own distinctive flair to the guest experience, particularly through the drinks programme. He carefully develops both wine and soft pairings, working closely with local ingredients and nearby farms. By blending regional flowers, herbs, and seasonal flavours, he creates thoughtful, expressive pairings that elevate each course and celebrate the surrounding landscape.
In recognition of his dedication and excellence in service, Arsen was recently honoured with the 2026 Service Award from the MICHELIN Guide Thailand.
