Like Simon’s other Aulis chef’s tables around the world, Aulis Phuket champions hyper-local ingredients, with our chefs developing and perfecting flavours and techniques to create an almost entirely unique experience for the 15 guests at each service. The Aulis Phuket team is led by Simon, Executive Chef Oli Marlow and Head Chef Charlie Wilson.

The tasting menu at Aulis Phuket is dedicated to showcasing native ingredients, working hand in hand with local farmers and growers from across Thailand and Asia. The menu can be paired with wine or non-alcoholic drinks flights, carefully chosen by our restaurant team.

Aulis Phuket is open Tuesday to Saturday for dinner.

While the Aulis dining experience is only suitable for adults, we haven’t forgotten about our younger guests. For an additional THB 1000 per child, the warm and friendly team at the Iniala Kids Club will ensure your children are happily engaged and fed while you enjoy your dinner with us.

Please contact us or your concierge if you would like us to organise transfers to and from your hotel. We can provide limousine and minibus transfers.

Please notify us of any dietary requirements or allergies at the time of booking, and we will do our utmost to accommodate your needs. Kindly note that some restrictions may not be feasible due to the complexity and seasonality of our menu.

The space is named Aulis as a tribute to Aulis Lehtimaki, a Finnish chef and artist who was a key team member in the early days at Simon’s three Michelin-starred restaurant L’Enclume.
