Today is a special moment for us as we celebrate retaining our one Michelin star for the second year. To our chef patron Simon Rogan, thank you for your vision, support, and guidance. To our executive chef Oli Marlow, head chef Charlie Wilson, and restaurant manager Arsen Brahaj, your dedication and hard work make dining at Aulis Phuket truly unforgettable.

We’re also incredibly proud of Arsen, who was awarded the Michelin Service Award today, a recognition that reflects his genuine passion for exceptional hospitality. His engaging multilingual approach (speaking English, Albanian, Italian, and French), his talent for creating bespoke drink pairings using local flowers, flavours, and surplus produce from the kitchen, along with his extensive wine knowledge, make him an invaluable part of our team. Arsen, who previously honed his skills at Simon Rogan’s two Michelin-starred ION Harbour in Malta, was the sole recipient of the Service Award in the Michelin Guide Thailand this year.
